Hartington man will be bringing authentic Mexican food to town

HARTINGTON — Hartington area residents will soon be able to get a taste of authentic Mexican food.

Isidro Jimenez and his wife, Esmerelda Vargas, have been working the past several weeks to get all the proper permits and to prepare a food truck where they can sell their food.

The Cedar Taco food truck will be located in the Keith’s Package Liquor parking lot.

“There was nothing like this here. People said they’d like to have something like this — a lot of people are excited about this,” Jimenez said.

Jimenez, who has lived and worked here as a farm laborer for the past nine years, said the truck will open for business for the first time this Saturday, Nov. 2.

Cedar Taco will hold a grand opening Nov. 2 with free popcorn and free cotton candy.

They will be selling food out of the truck from 11a.m.-8 p.m.

Jimenez said he has always enjoyed cooking and would often prepare food for friends and family.

The food truck menu may vary, but he expects the staples to be tacos, tortias, burritos, quesadillas, nachos, and horchata.

He will also have cotton candy available for sale.

The menu will feature steak, chicken and pork, he said.

He also serves a specialty pineapple water and a strawberry water.

Jimenez expects the food truck to be open for five or six days a week.
